Whole Grains Banana Raisins Muffins


When December hits, I brace myself. I'm a sucker for laugh, movie nights, sweets, smiles, hot cocoa, twinkling light and fireplaces. Holidays, Parties, birthdays, they all come rushing at me and if i don't focus, end up a little dizzy and way out of sorts by the time January hits. 


December's ability to pass by at the speed of light breaks my heart every time because they are my favorite lovely months of the year.


I think the reason why i love the holidays so much is because they are a time to celebrate the love that is all around you. 


This year was all about growth, change and yes, it was a bit of struggle in life but i pushed through.
friends came , and now some are gone, and while it is always disappointing to say goodbye to people in your life who used to care about.


I am such a lucky girl to have the most amazing friends who can make me laugh and offer comfort when i just want to cry , encounter obstacles and give up. They remind me of the person i was, and show me how to be a better person than i am now.


I'm truly grateful for the friends that i have made with. I found a great friends who are just so sweet , caring, unselfish and REAL. Without them , it would be an awfully lonely place.

If i could , i would like to send this little muffin to my friends to show how much i care for!


Our muffin characters today are whole wheat flour, oat bran, ground almond, baking powder, baking soda, salt, butter , honey , eggs white, vanilla extract, banana and buttermilk.


In a large bowl, mixing together dry ingredients until well combined. Set aside.


In a separate bowl, whisk together wet ingredients.

Pour dry ingredients into wet ingredients and stir with a wooden sp
oon until just combined.


Add raisin into the mixture.


Spoon the batter into muffin cups, filling each cup almost to the top.


Place immediately in a preheated 375 degree oven for 20 minutes or until toothpick inserted in the center comes out clean .



Cool in pan on rack for 5 minutes, serve warm or at room temperature.

Banana Raisin Muffins
Ingredients:
1 ½ Cup whole wheat flour
½ Cup Oat Bran
½ Cup ground almonds
2 t. baking powder
1 t. baking soda
½ t. salt
2 T. butter, melted
½ Cup honey
3 egg whites
1 Cup banana
2/3 Cup buttermilk
Directions:
1. Preheat oven to 375 degrees. Grease 12 regular-sized muffin cups or line with paper cups.
2. In a large mixing bowl, whisk together dry ingredients (first six ingredients) until well combined. Set aside.
3. In a separate bowl, whisk together all wet ingredients (last 5 ingredients).
4. Pour wet ingredients into dry ingredients and stir with a wooden spoon until just combined.
5. Immediately spoon batter into the 12 muffin cups, filling each cup almost to the top.
6. Place immediately in a preheated 375 degree oven for 20-25 minutes or until a toothpick inserted in the center comes out clean. Start checking early!
7. Turn muffins out of pan and cool on wire rack.
8. Enjoy!

A Very Merry Christmas Chocolate Nuts Bark


Christmas was made for chocolate. Grocery store will piles of chocolate treats, stacked high and proud.
What is it about this sweet, dark temptation that so many of us crave during the holidays? 
I like to think it's the decadence, the texture and the flavor. 


The holidays were made for indulgence and chocolate is the ultimate indulgent dessert.


I made this Chocolate nuts bark and planning on making it again for next week's holiday because it was an absolute hit.


I've always been a huge fan of chocolate ! These are amazingly good. I was pleasantly surprised. Not only did i not feel guilty for eating a few but they weren't too sweet either. They had a great texture . 
I will be making these again tomorrow.


The minute i tasted these, though, i knew i needed to share them.


I would like to say Chocolate makes everything better. I love chocolate , Can you tell ??
I am so glad that i made this!


They're very, very easy, and, with the exception of chill times, they're very fast too. 


What you need is : Milk chocolate , macadamia nuts, salted peanuts....What's not to love?


Lets get started, Melt the milk chocolate and stir in nuts, and add 1 teaspoon of vanilla extract!


oh ya... Melt the white chocolate and drizzle on top of the milk chocolate.


Oh niceee... yum yum yummy! Right?


I made 1 batch and i can't stop eating..They are simply the best!

Recipe : Chocolate Nuts Bark


Ingredients:


1 pound Milk Chocolate
3/4 cup macadamia nuts
3/4 cup salted Peanuts
White Chocolate ( for decoration)
1 teaspoon vanilla extract


Instruction:


Line a cookie sheet or tray with wax paper or parchment. 


Melt the white chocolate and pour in a squeeze bottle. 


Melt the milk chocolate and stir in nuts . Spread it on prepared cookie sheet.


Drizzle white chocolate on top. If you don't have a squeeze bottle, you could use a zip top bag ( cut off a tiny corner),


Pop the tray in the fridge until hardened.


Break it into pieces.

Merry Christmas ! I hope you all had a wonderful memorial Christmas Day.


Wow, I can hardly believe that December is going to end soon and we are well into the Christmas holiday season now!!!


I've been buying chocolate chips, peanut butter, almond, chocolate coating , white sugar , brown sugar, flour and butter for the past few weeks, just want to bake all my Christmas goodies. 


I am so excited about my giftable Christmas goodies. I've been baking and preparing all of my Christmas Cookies and Chocolate Candies that i will be packaging up for someone special, family and my good friends.


Chocolate Cookies Luscious , Well, I decided to make something I've been thinking about it for quite some time. 



The scrumptious end result is what i like to call a luscious. They may not look like much from the outside , but these yum yum chocolate cookies are hiding a secret. ...... a filling. 
This is a cookie.. and the filling is another cookies. I mean sweet chocolate cookie stuffed with a classic chocolate chip cookie???


I love the idea came from bakingdom, a simple looking chocolate cookies hiding a yum yum chocolate chip cookie inside.


In a small bowl , whisk together the flour , cocoa powder, baking soda and salt, set aside.


In a large bowl , cream the butter and sugar until thoroughly combined.


Beat in the eggs and vanilla until combined.




Add the flour mixture and beat until just combined.


Chocolate dough


Next, make the vanilla dough by again whisking all dry ingredients together and set aside. 


Add the mini chocolate chips .


Scoop out one tablespoon of chocolate dough and flatten it into a round disk. Flatten the dough with your hand rather than directly on the sheet. 


Scoop out one tablespoon of vanilla dough and roll into a ball,  place the vanilla ball on top of the chocolate disk. wrapping the chocolate dough halfway up the sides of the vanilla dough ball. Scoop another tablespoon of chocolate dough make another disk. 





Use the second patty to enclose the vanilla dough ball in chocolate dough. 


They probably seem pretty labor intensive and time consuming , but it's worth to make for someone special..right??

Chocolate Chocolate Cookies Luscious
Makes about 18 very large cookies
Ingredients
FOR THE CHOCOLATE DOUGH
2 cups all-purpose flour
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cups (1 1/2 sticks) unsalted butter, at room temperature
1 cup packed brown sugar
1/2 cup sugar
2 eggs
2 teaspoons vanilla extract
FOR THE VANILLA DOUGH
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons unsalted butter, at room temperature
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1/2 to 3/4 cup semi-sweet chocolate chips
To make the chocolate dough: In a small bowl, whisk together the flour, cocoa powder, baking soda, and salt; set aside.
In a large bowl, or the bowl of a standing mixer, cream the butter and sugars until thoroughly combined. Beat in the eggs and vanilla until combined. Add the flour mixture and beat until just combined. 
Transfer the mixture to a different bowl (if using a stand mixer), cover, and set aside.
To make the vanilla dough: In a small bowl, whisk together the flour, baking soda, and salt; set aside.
Ina large bowl, or the bowl of a standing mixer, cream the butter and sugars together until thoroughly combined. Beat in the eggs and vanilla until combined. Add the flour mixture and beat until just combined. Stir in the chocolate chips.
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
Using a 1tablespoon, scoop out 1 tablespoon of chocolate dough and shape it into a round patty. 
Scoop one tablespoon of the vanilla dough and roll into a ball. Place the vanilla ball on top of the chocolate patty, wrapping the chocolate dough halfway up the sides of the vanilla dough ball. Scoop another tablespoon of chocolate dough and make another patty. 
Use the second patty to enclose the vanilla dough ball in chocolate dough. Repeat with the remaining dough. Place the cookies on the prepared baking sheets, about 2-inches apart. Bake for 18-20 minutes, until the edges are starting to harden and the centres are puffy. 
Allow to cool on the sheets for 2 minutes. Transfer to a wire cooling rack and cool completely before serving.
