Mini maple chocolate chip pancake muffins

If you are looking for an extra special breakfast treat for someone special that you love, try mini chocolate chip puffins. So i went into the kitchen and made a batch of mini chocolate chip puffins.


All ingredient we need is all-purpose flour, granulated sugar, salt, baking powder, baking soda, buttermilk, pure maple syrup, egg, butter and semi-sweet chocolate chips.



The muffins batter is thick and studded with chocolate chips. I used semi-sweet chocolate chip, but milk chocolate chips would also work well. The batter was easy to mix together and the muffins only took about 15 minutes to bake. 


I usually don't eat chocolate for breakfast, but i had to taste the puffins to make sure they were good enough for someone special. hehee''''

These mini maple pancake muffins with chocolate chips were too adorable to pass up.  It's the perfect morning breakfast for when you want to make something special without whisking and standing in the kitchen for hours.

Mini Chocolate Chip Pancake Muffins
( pancake + muffin = Puffins)

1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
11/2 tablespoons granulated sugar
1 egg
2 tablespoons pure maple syrup
2 tablespoons melted butter
1/2 cup semi-sweet chocolate chips

* preheat oven to 350 degrees.
* Combine flour, baking powder, baking soda, salt and sugar in medium bowl. sift together with a wire 
   whisk.      
* In another bowl, stir buttermilk,egg, maple syrup and melted butter until just combined.
* Add wet ingredients to dry ingredients and stir with a spoon until combined.
* Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.
* Bake for 12-15 minutes.

Make 12 mini pancake muffins.

Let cool slightly and remove from the pan. 
Serve immediately with warmed butter if u like or even just with maple syrup.
