Chocolate Chocolate Cookies Luscious





Merry Christmas ! I hope you all had a wonderful memorial Christmas Day.


Wow, I can hardly believe that December is going to end soon and we are well into the Christmas holiday season now!!!


I've been buying chocolate chips, peanut butter, almond, chocolate coating , white sugar , brown sugar, flour and butter for the past few weeks, just want to bake all my Christmas goodies. 


I am so excited about my giftable Christmas goodies. I've been baking and preparing all of my Christmas Cookies and Chocolate Candies that i will be packaging up for someone special, family and my good friends.


Chocolate Cookies Luscious , Well, I decided to make something I've been thinking about it for quite some time. 



The scrumptious end result is what i like to call a luscious. They may not look like much from the outside , but these yum yum chocolate cookies are hiding a secret. ...... a filling. 
This is a cookie.. and the filling is another cookies. I mean sweet chocolate cookie stuffed with a classic chocolate chip cookie???


I love the idea came from bakingdom, a simple looking chocolate cookies hiding a yum yum chocolate chip cookie inside.


In a small bowl , whisk together the flour , cocoa powder, baking soda and salt, set aside.


In a large bowl , cream the butter and sugar until thoroughly combined.


Beat in the eggs and vanilla until combined.




Add the flour mixture and beat until just combined.

Next, make the vanilla dough by again whisking all dry ingredients together and set aside. 


Add the mini chocolate chips .


Scoop out one tablespoon of chocolate dough and flatten it into a round disk. Flatten the dough with your hand rather than directly on the sheet. 


Scoop out one tablespoon of vanilla dough and roll into a ball,  place the vanilla ball on top of the chocolate disk. wrapping the chocolate dough halfway up the sides of the vanilla dough ball. Scoop another tablespoon of chocolate dough make another disk. 





Use the second patty to enclose the vanilla dough ball in chocolate dough. 


They probably seem pretty labor intensive and time consuming , but it's worth to make for someone special..right??

Chocolate Chocolate Cookies Luscious
Makes about 18 very large cookies
Ingredients
FOR THE CHOCOLATE DOUGH
2 cups all-purpose flour
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cups (1 1/2 sticks) unsalted butter, at room temperature
1 cup packed brown sugar
1/2 cup sugar
2 eggs
2 teaspoons vanilla extract
FOR THE VANILLA DOUGH
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons unsalted butter, at room temperature
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1/2 to 3/4 cup semi-sweet chocolate chips
To make the chocolate dough: In a small bowl, whisk together the flour, cocoa powder, baking soda, and salt; set aside.
In a large bowl, or the bowl of a standing mixer, cream the butter and sugars until thoroughly combined. Beat in the eggs and vanilla until combined. Add the flour mixture and beat until just combined. 
Transfer the mixture to a different bowl (if using a stand mixer), cover, and set aside.
To make the vanilla dough: In a small bowl, whisk together the flour, baking soda, and salt; set aside.
Ina large bowl, or the bowl of a standing mixer, cream the butter and sugars together until thoroughly combined. Beat in the eggs and vanilla until combined. Add the flour mixture and beat until just combined. Stir in the chocolate chips.
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
Using a 1tablespoon, scoop out 1 tablespoon of chocolate dough and shape it into a round patty. 
Scoop one tablespoon of the vanilla dough and roll into a ball. Place the vanilla ball on top of the chocolate patty, wrapping the chocolate dough halfway up the sides of the vanilla dough ball. Scoop another tablespoon of chocolate dough and make another patty. 
Use the second patty to enclose the vanilla dough ball in chocolate dough. Repeat with the remaining dough. Place the cookies on the prepared baking sheets, about 2-inches apart. Bake for 18-20 minutes, until the edges are starting to harden and the centres are puffy. 
Allow to cool on the sheets for 2 minutes. Transfer to a wire cooling rack and cool completely before serving.

Sugar Cookies Stuffed Chocolate Mousse


I've been sick with a fall flu for the past couple weeks and have spent more time in bed than i care for.

I miss my kitchen and the real desire for food. I still got myself to make these over the week.

Happy Friday EVERYONE, lovelies ! I like you. I made this for you. It's loooong weekend. Yay for all of us.

Here's an incredibly scrumptious Sugar cookies stuffed with chocolate mousse. The flavor combination in this blow me away every single time. And i know you will love this one....


OK, I know i will say that these were my favorite cookies and they are practically perfect and amazingly delicious..



I m using Chocolate Mousse !


Chocolate Mousse bar cut into individual square





For this cookie, I used my favorite sugar cookie recipe and tucked a piece of chocolate mousse bar inside of each cookie.


Something about the combination of the sugar cookies with chocolate mousse ... a total completely match made in heaven.


Do yourself a huge favor and try these ASAP **


 Let me just tell you , these are so delicious!



Recipe : Sugar Cookies Stuffed Chocolate Mousse

Ingredients:

2 1/2 cups all purpose flour

1/2 tsp baking powder

1/2 tsp salt

2 cups granulated sugar

1 3/4 sticks unsalted butter , softened

2 large eggs

2 tsp vanilla extract

8oz. Chocolate Mousse chocolate bar (such as Cadbury), cut into individual square

Preparation Instructions :

Preheat the oven to 350 degrees F. Line 2 large baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking powder and salt.

In a large bowl, beat butter and 11/2 cups of granulated sugar with an electric mixer set on medium speed until the mixture is creamy and fluffy, 3 to 5 minutes.

Beat in the eggs, one at a time and the vanilla extract.

Turn the mixer to low speed and gradually beat in the flour mixture until combined. Using rubber spatula, stir the mixture a few times to make sure all of the flour is incorporated.

Place the 1/2 cup granulated sugar in small bowl. Use 2 tablespoons cookies dough for each cookies. Split the piece of dough in half, slightly flatten the bottom half, place a square of chocolate mousse bar on top and cover with the other piece of cookies dough. Seal the edges with your finger.

Roll the ball in the sugar to coat it and place it on a baking sheet.

Bake 15 to 20 minutes.

Remove the cookies from the baking sheet and let cool on a rack. They can also served warm!

Chocolate Chunk Muffins



Hi, How was has your week been so far? Food?

What are you doing this weekend? I'm hitting the yoga studio. I've finally caved and realize typing doesn't count as exercise, and i couldn't believe that i put on weight a lot @_@

And since i don't believe in dieting, I need to be active so i'm not forced to buy an entire new wardrobe.

Hmmm.. I think you should make this.. it's Chocolate Chunk Muffin! Don't you just love the title??
I love muffin a lot , I couldn't help myself...Hehee!

Today I have prepared something lovely for all you chocoholics out there!


This is what you need to prepare : flour, cocoa powder , baking powder, sugar, dark chocolate, milk , butter and egg.


Sift the flour, cocoa powder, baking powder and sugar into a large bowl.
Stir to combine.


Add the chocolate Chunks and stir again.


Whisk the egg, butter and milk.


Pour the dry ingredients to wet ingredients, using spatula or wooden spoon, stir the mixtures together until everything is moistened.



Spoon the mixture into muffin pans...bake for 20 minutes.



Mmmmm... so lovely!


You surely can't escape this.

THE CHOCOLATE CHUNK MUFFINS!


They are soft and moist and the chocolate chunks melt in your mouth and.....


...they just make you close your eyes and go "Mmmmmmm"**

Recipe : Chocolate Chunk Muffins

Ingredients

3 cups flour

3 tablespoons cocoa powder

11/2 tablespoons baking powder

11/2 cups granulated sugar

200 grams dark chocolate, chopped

11/2 cups (360ml) milk

3/4 cup (170 grams) butter, softerned

2 eggs

Preparation Instructions:

Preheat an oven to 356 F (180 c)

Sift the flour, cocoa powder, baking powder and sugar into a large bowl. stir to combined

Add the chocolate chunks and stir again.

Whisk the eggs , butter and milk, then using a spatula or wooden spoon , stir the dry mixtures to wet mixtures together until everything is moistened.

There will be a bit lumps but small lumps are fine.
Spoon the mixture into muffin pans. Bake 20-25 minutes.

Leave in the pan for 5 minutes before removing.

Muffins are best when freshly made, but for muffins anytime you want them , wrap them (cooled) in pastic and freeze for up to two months.

Cheesy Baked Bacon With Chunky Pasta Sauce


What do you do for a living? I enjoy the processing while cooking for someone that you love!


A dish doesn't have to be complicated or take a lot of time,to be good.  I made this recipes for baked bacon in a pasta sauce with a lot of cheese.  



You need this : sausages, mushroom, bacon , butter, bread ( i use wholemeal bread), pasta sauce, cheese , pepper and salt.


A hearty dinner made with bacon, mushrooms, sausages , and a little kick of chachos. Topped with a chunky pasta sauce and cheese, this dish is comfortable at the brunch or dinner table.


Look at this , so scrumptious ! 
These look beautiful on a platter and they're perfect finger food as well.

Recipe : Cheesy Baked Bacon With Chunky Pasta Sauce

Ingredients:

3 Slices of wholemeal bread or other bread

3 tablespoon of butter 

1 bottle of chunky pasta sauce

bacon, musroom and sausages ( u could add more if you like)

pepper and salt

chachos (optional)

Preparation Instructions

Spread all bread slices on butter and chunky pasta sauce.
Preheat the oven to 400 degrees F. Cut bacon , sausages to a small pieces, put on a cooking sheet bake for 15 minutes or until turn to golden brown. Turn each piece and bake another 5 minutes. Remove from oven and let cool.
Throw all the ingredients on top of the breads and add some pasta sauce , sprinkle a little bit of pepper and salt.
Top each cheese on top and bake another 20 minutes or until cheese is melted or turn to golden brown and crisp.

Remove from oven.  Allow to cool for a few minutes and serve. sprinkle some chachos.

Cranberries Oats Chocolate Chunk Almonds Cookies


Today i have a no brainer recipe.. I LOVE these ! Just a simple step by step.. of this yummy cookies... no wrong ingredient amounts. Just a straight forward easy post!


Here is what you will need : butter, eggs, whole wheat flour, brown sugar, salt, cinnamon ,baking soda, baking powder, vanilla extract, rolled oats, light corn syrup, dark chocolate , chocolate chips, cranberries and toasted almond.


In a large bowl , whisk together the whole wheat flour, oats , baking soda, cinnamon and salt.


In the bowl of a stand mixer, beat the sugar and butter until creamy.



beat in the vanilla , egg and light corn syrup. with the stand mixer on low speed, slowly add flour mixer beating until just combined. fold in the remaining ingredients.


Bake for 11 to 13 minutes.



They're quite chewy and a bit caremely.


The assortment of fillings keeps it interesting.

1/4 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup brown sugar
1/4 cup unsalted butter, room temperature
1 teaspoon vanilla extract
1 large egg
1 tablespoon light corn syrup
1/3 cup chopped dark chocolate
1/3 cup chocolate chip
1/3 cup dried cherries
1/3 cup chopped, toasted almonds

Preheat oven to 350', Line two baking sheet or parchment paper.

In a large bowl , whisk together the whole wheat flour, oats , baking soda, cinnamon and salt. In the bowl of a stand mixer, beat the sugar and butter until creamy. beat in the vanilla , egg and light corn syrup. with the stand mixer on low speed, slowly add flour mixer beating until just combined. fold in the remaining ingredients.

Drop dough by heaping tablespoonfuls onto the prepared baking sheets. Bake for 11 to 13 minutes.

Remove from the oven and allow the cookies to cool on the pan for a couple of minutes. Transfer to a wire rack until cool completely.

Store in an airtight container.

Creamy Egg Salad Sandwich



I start my morning like so many people.

Egg Salad Sandwich is my favorite breakfast.

Breakfast ( literally meaning " breaking the fast " of the night ) is the first meal taken after rising from a night sleep.

I always remember my mum told me who skip breakfast are disproportionately likely to have problems with concentration, metabolism and weight.

Here's an incredibly delicious Egg Salad Sandwich that i just love.


The ingredients : bread, eggs, whole grain mustard, mayonnaise , lemon, salt and pepper.



Can i tell you the secret to super delicious Egg Salad?                                         
 Lemon, yes! lemon really balance out creamy eggs and mayo.


This is seriously good!


Quick and simple yummy Egg salad sandwich

Egg Salad Sandwich 


make 4 sandwiches


Recipe


8 hard boiled eggs, peeled and cut in half

heaping 1/4 cup mayonnaise

heaping teaspoon whole grain mustard

2 tablespoons finely diced shallots

2 teaspoons fresh lemon juice

salt and pepper

Making egg salad is super easy. once the eggs are hard boiled and peeled, and the herbs and shallots are chopped, dump everything into a medium bowl. Use a folk to break up the egg whites and yolks and incorporate all of the ingredients. Add mayonnaise if you'd like it more creamy. Add salt and pepper to taste. Spoon onto good bread and enjoy.
Store egg salad in the fridge for up to 4 days .
